Ingredients

 Crust
 Whole wheat pastry flour1 1/2 Cup (16 tbs)
 Salt1/2 Teaspoon
 Oil1/3 Cup (16 tbs)
 Ice water4 Tablespoon
 6 slices bacon, nitrite-free
 About 1 ounce grated swiss cheese
 Egg1 (Filling)
 Light cream1/3 Cup (16 tbs) (Filling)
 Chives1 Teaspoon, chopped (Filling)
 Pepper white1 Dash (Filling)
 Nutmeg1/8 Teaspoon (Filling)
 Salt1/4 Teaspoon (Filling)

Directions

Preheat oven to 400° F.
Mix together flour and salt.
Mix together oil and water.
Add liquids to dry ingredients, and stir with fork until dough forms a ball.
Divide into twelve small balls and press each ball of dough into one space of a miniature muffin tin, forming a little pastry shell.
Build up a nice edge.
Fry bacon until crisp; drain and crumble.
Place bits of crumbled bacon and grated cheese in each of the twelve miniature quiche shells.
Lightly beat together remaining ingredients and carefully spoon into shells.
Sprinkle with nutmeg.
Bake in preheated oven for about 15 minutes.
