Ingredients
Crust
1 1/2 cups whole wheat pastry flour
1/2 teaspoon salt
1/3 cup oil
About 4 tablespoons ice water
Filling
6 slices bacon, nitrite-free
About 1 ounce grated swiss cheese
1 egg
1/3 cup light cream
1 teaspoon chopped chives
Dash of white pepper
1/8 teaspoon nutmeg
1/4 teaspoon salt
Directions
Preheat oven to 400° F.
Mix together flour and salt.
Mix together oil and water.
Add liquids to dry ingredients, and stir with fork until dough forms a ball.
Divide into twelve small balls and press each ball of dough into one space of a miniature muffin tin, forming a little pastry shell.
Build up a nice edge.
Fry bacon until crisp; drain and crumble.
Place bits of crumbled bacon and grated cheese in each of the twelve miniature quiche shells.
Lightly beat together remaining ingredients and carefully spoon into shells.
