For Sweet Potato Fries
GETTING READY
1. Preheat the oven at 425 degrees F.

MAKING
2. In a large bowl combine the sweet potato, ginger, coriander, cinnamon, cumin, black pepper, salt, cloves, cardamom, and extra virgin olive oil. Toss to evenly coat the fries.
3. Spread the fries evenly on a baking sheet. Bake in oven for 35 minutes at 425 degrees F.

SERVING
4. Recipe follows.

For Bison Steak
GETTING READY
1. Preheat the grill on medium heat.

MAKING
2. Brush the ribeye steaks with extra virgin olive oil.
3. Season with black pepper and salt. Season both the sides of the steak.
4. Place the steaks on the preheated grill pan and cook for 7 to 8 minutes, flipping once.
5. Slice the steak and set aside.

SERVING
6. Recipe follows.

For Frisse and Watercress Salad
MAKING
1. In a large bowl add in the fresse, watercress, cider vinegar, apple cider, brown sugar, celery seed, granulated garlic and safflower oil. Toss and season with salt and pepper.
2. Add in the fresh blueberries to the salad.

SERVING
3. Serve Bison Steak with Sweet Potato Fries and Frisse and Watercress Salad
