Standard egg substitutes include: 1) 1 Tbs cornstarch stirred into 2 Tbs of cold water for 1 egg 2) 1/2 tsp baking powder, 1/4 tsp baking soda, 1 Tbs flour blended into 2 Tbs cold water for 1 egg 3) 1/4 cup unsweetened applesauce 4) 1/4 cup plain yogurt I have used these options to substitute for eggs in other baked goods, but have never tried it in this particular recipe. I think, based on experience, that any option but the applesauce (because of the flavour) might work here.
