Bird'S Nest Pudding Recipe

Ingredients

| Red food coloring | 1/4 Teaspoon | |
| Apples | 6 Medium, washed | |
| Eggs | 3 | |
| Sugar | 1/4 Cup (16 tbs) | |
| Vanilla extract | 2 Teaspoon | |
| Cream | 2 Cup (16 tbs), scalded |
Directions
1. Add the 2 cups sugar to the water in a large saucepan; bring to boiling, stirring until sugar is dissolved. Mix in the food coloring.
2. Add as many apples as will fit uncrowded in the saucepan; cover and cook slowly until apples are just tender, about 7 minutes, turning carefully several times to obtain an even color. With a slotted spoon, transfer apples to a 1 1/2 quart baking dish.
3. Combine eggs, the 1/4 cup sugar, and vanilla extract in a bowl; beat just until blended. Gradually add the hot cream, stirring until sugar is dissolved. Strain mixture through a fine sieve over apples in the baking dish. Set dish in a larger pan on oven rack; pour boiling water into pan to a depth of at least 1 inch.
4. Bake at 325°F 50 to 60 minutes.
