Ingredients

 
Bindi/Okra/Lady's Finger - 1/2 lb
 
Onions (optional) - 1/4rth cup
 
Groundnuts - 1/4rth cup
 
Green chillies - 3 slit lengthwise
 
Curry leaves - 1 sprig
 
garlic pods - 3 crushed
 
coconut powder - 1 tbs
 
Mustard seeds - 1/2 tsp
 
Cumin (Jeera) seeds - 1/2 tsp
 
Dhaniya powder - 1 tsp
 
Turmeric powder, salt & chilly powder - as per taste

Directions

Cut okra into small circles & refrigerate for 2 hours (cut frozen okra can also be used)

Microwave groundnuts in half cup water for 2 minutes, drain & keep aside.

Heat oil in a wok, add mustard seeds & allow them to splutter; Then add cumin seeds, onions (optional), green chillies, curry leaves & crushed garlic pods. Saute until garlic turns light brown.

Add turmeric powder, salt & chilly powder.

Add okra & mix well.

Add boiled groundnuts, coconut powder & mix well.

Keep stirring at regular intervals. Fry until okra turns tender & dark green. (Frying takes approx 20 mins).

Serve Hot.

I used less than half the oil and it was terrific. I used olive oil as a healthy choice option.

I made the Bhindi Fry last night and we loved it! Great recipe. I wasn't sure when to add the coconut powder so I just added it with the tumeric. It was perfect with the Goan Fish w/gravy, and the Dal I made using the Beluga Black tiny lentils-love them. BTW here they are available at Trader Joe's. The Dal contained coriander, chile, Kashmiri Mirch, salt, onions, garlic,cumin,cloves, curry leaf, and asafoetida. I am not sure which region it is from, but a way I learned from friends in Delhi.
