Billed Shrimp And Feta Cheese Salad Recipe

Dilled shrimp and feta cheese salad is a lovely seafood salad. Prepared with cooked shrimp herbed with dill, the dilled shrimp and cheese salad is spiced with garlic and mustard to taste. Tossed with olive oil and vinegar dressing, it is flavorful and peppy.

Ingredients

 
1 pound large shrimp, shelled and deveined
 
3 green onions, including tops, sliced thin
 
1/2 medium size cucumber, peeled, seeded, and chopped
 
1 jar chopped pimientos, drained and patted dry
 
2 tablespoons snipped fresh dill or minced parsley
 
1/4 cup rinsed and crumbled feta cheese
 
2 tablespoons lemon juice
 
2 tablespoons olive oil
 
1 tablespoon white wine vinegar
 
1 teaspoon Dijon or spicy brown mustard
 
1 clove garlic, minced
 
1/4 teaspoon black pepper

Directions

In a small heavy saucepan over moderately high heat, bring 1 quart unsalted water to a boil.
Add the shrimp and cook, stirring, until just firm about 2 minutes.
Drain, rinse under cold running water to stop the cooking, and drain again.
Place the shrimp in a large bowl and add the green onions, cucumber, pimientos, dill, and cheese.
In a small bowl, whisk together the lemon juice, olive oil, vinegar, mustard, garlic, and pepper.
Pour over the shrimp mixture and toss gently to mix.
