Big Circles Recipe

Very delicious, moist and finely flavored, this Big Circles is a hit whenever I dish it out at home. Made using zucchini, ham and a combination of spices and red wine, this Big Circles is something exotic in it look and taste. Do it a try, coz it is so awesome!

Ingredients

 
Zucchini 4 1-1/2 inch thick slices from very large one
 
Brown rice 1 cup freshly cooked
 
Medium cheddar cheese 1/3 cup grated
 
Ham, chicken, or leftover meat 1/2 cup minced
 
Seasoned salt 1/2 teaspoon
 
Red wine 1/4 cup
 
Fresh ground pepper
 
Paprika
 
Red wine 1/4 cup, for basting

Directions

Cut across zucchini in 1-1/2 inch slices; do not peel.
Remove center pulp and seeds; discard, leaving large rings for stuffing.
Put these on greased baking sheet or in shallow pan.
Combine all ingredients except paprika; fill centers of rings.
Sprinkle generously with paprika.
Bake at 350° for 35 minutes or until zucchini is tender, basting twice.
