Bhindi Masala (lady finger) Recipe
Yummy Okra fried with onion and spices suitable for lunch and dinner. Eat with naan or puri.

Ingredients
250 gms tender fresh bhindi
50 gms tomato fresh
50 gms onion
1 tsp chopped garlic
1 tsp red chilli powder
1 tsp-chhat masala 2 tsp
Coriander (dhaniya) powder 3/4 tsp
mango powder (amchur) 1/2 tsp
cumin seed powder 1 pinches
asafetida (hing) 2 tbsp
oil 1/4 tsp
cumin seeds salt to taste 2tsp fresh coriander leaves.
Directions
Wash, wipe and remove the tops and tips of Bhindi (Okra)
Peel onions and chop it.
Wash, wipe and chop fresh tomatoes.
Heat oil in a non-stick pan.
Add cumin seeds to oil, allow to splutter.
Put chopped garlic in the pan, saute for a few seconds then put chopped onion. Sautee till onion becomes soft.
Now add spices (hing, coriander, chhat masala, mango powder, red chilli powder, cumin powder) to onion and sauté well
Add chopped tomato, cook for 2 minutes
Now add salt
Add bhindi to mix, continue sauté
When bhindi is tender and cooked, remove from stove
Garnish with garden fresh chopped coriander leaves.
Serve with naan, roti, parathas or puris.
