Bhindi Masala Recipe
Bhindi masala is a spicy and dry indian preparation of lady's fingers that can be served with rice or rotis. Made with slit lady's fingers stuffed with a masala mix of onions, chili powder, turmeric powder, dry mangpo powder and aniseed powder, the bhindi masala is one of my favorite recipe that is quite easily prepared and very savory.
Ingredients
250 gms lady's fingers (slit)
100 gms onions (finely chopped or grated)
Salt to taste
3/4 tsp. red chilli powder
3/4 tsp. coriander powder
1 tsp. aniseed powder
1 tsp. oil
1/4 tsp. turmeric powder
1 tsp. dry mango powder
1/2 tsp. cumin seeds
1 tbsp. oil
Directions
Mix well the finely chopped/ grated onions, salt, red chilli powder, coriander powder, turmeric powder, dry mango powder and aniseed powder.
Add 1 tsp.oil for binding.
Mix well.
Stuff the prepared masala in the slit Lady's fingers.
Heat oil, in a 1/2 litre shallow dish, on 100% power for 40 seconds.
Add the cumin seeds and microwave on 100% power for 30 seconds.
Add the stuffed Lady's fingers and the left over masala (if any) and microwave, partially covered on 100% power for 4:00 minutes.
Stir twice during cooking.
Add 1 tsp.oil for binding.
