Ingredients
1 lb okra head and tail removed.
3 tbsp oil
1 tsp each cumin seeds, mustard
1/2 tsp methi seeds
1 tsp each of turmeric, dhania and chilli powder
salt to taste
Directions
1.Wash the okra and dry completely with a towel.
2. Next chop them into thin rounds. If possible keep them for 1-2 hours before stir-frying.
3. Heat the oil in a pan and add the cumin and mustard. Allow to splutter and add the methi(fenugreek) seeds.
4. Now add the okra and the other spices and salt. Mix well and cook on medium heat. Keep stirring.
5. Don't put a lid on. The okra will turn soggy.
6. Enjoy it with some Indian bread.

I use my electric wok to cook okra. so it will have constant temp. to cook. It is easy and fast this way.

Nice smile. Generally it is better to buy fresh long oakra and cut it, but if you are short on time cut Okara is fine. This looks like Gujarati style. What you put in beginning varies from region to region of India. Cumin, Panchpuran(5 spice mix), Fenugreek seed, mustard seed are some other options.
