Ingredients

 
Okra - 1 pound
 
Cooking oil - 3-4 tablespoons
 
Cumin seeds - 1 teaspoon
 
Mustard seeds - 1 teaspoon
 
Fenugreek seed - 1/2 teaspoon
 
Turmeric powder - 1 teaspoon
 
Coriander powder - 1 teaspoon
 
Chili powder - 1 teaspoon
 
salt - to taste

Directions

GETTING READY
1. Wash the okra and dry it completely with a towel.
2. Cut it into thin rounds. If possible keep them aside for 1-2 hours before stir-frying.

MAKING
3. In a pan, heat oil over a high flame.
4. Add cumin and mustard seeds.
5. Once they start to splutter, add fenugreek seeds.
6. Reduce flame to medium heat and add okra.
7. Add coriander, chilli and turmeric powder.
8. Add salt and mix it well.
9. Cook it over a medium flame.
10. Okra takes 10 minutes to cook but keep mixing it to avoid burning. Also, don’t close the pan with a lid as otherwise the okra will turn soggy.

SERVING
11. Serve Indian Bhindi Subzi with Indian bread like chapatti or naan.

Nice smile. Generally it is better to buy fresh long oakra and cut it, but if you are short on time cut Okara is fine. This looks like Gujarati style. What you put in beginning varies from region to region of India. Cumin, Panchpuran(5 spice mix), Fenugreek seed, mustard seed are some other options. well made 4 stars.
