Bhindi Masala ( Stir Fried Okra) Recipe

Bhindi masala is for one of those days when you feel like eating something spicy and delicious but don't feel like spending too much of time in the kitchen making the dish. A delicious okra dish, stir fried with tomatoes, onions and a variety of other Indian spices.

Ingredients

 1/4 kg tender okras, chopped into 1? inch pieces
 Finely sliced onions- 2
 Chopped tomatoes1 Large
 Cumin seeds/powder- 1 tsp
 Chili powder1 Teaspoon
 Coriander powder1/2 Teaspoon
 Garam masala powder1/2 Teaspoon
 Salt To Taste
 Oil3 Tablespoon
 Chopped coriander leaves- 2 tbsp

Directions

1. Heat oil in a skillet and add the onions. Fry until they're translucent.
2.Add the tomatoes and salt. Fry until the tomatoes are a little mushy.
3. Now add all the powdered spices and mix well. Stir fry for 2 minutes.
4.Add the okras and stir fry until the okras are tender.This should take about 5-7 minutes.
5. Garnish with coriander leaves.

You can serve bhindi masala with any bread or steamed rice.
