Directions

GETTING READY
1) In cold water, wash the okra well. Cut off the top and tail.

MAKING
2) In a casserole, place the okra.
3) To this, add the tomatoes and their juice, onions, tamarind and a light sprinkling of salt and pepper. Mix well.
4) On high power, cook covered for 10 minutes, stirring in between.
5) Uncover and cook for 5 minutes, stirring twice.
6) With a slotted spoon, transfer the okra to a warm serving dish.
7) In a bowl, mix the cornflour and cold water.
8) Into the cooking liquid, add this.
9) On high power, cook for 1 minute and then stir thoroughly.

SERVING
10) Serve the Okra hot topped with the sauce. Serve cooked roast buckwheat or lentils on the side.
