Indian Bhel Puri Recipe Video
Ingredients
For Bhel
Rice puffs (kurmura)- 200 gms
Thin gram flour noodles (sev) - 150 gms
Wheat crispies (puries) - 150 gms
Boiled potatoes - 1/2 cup , cut into small cubes
Onion - 1/4 cup, finely chopped
Coriander - 2 tbsp, finely chopped
Salt - to taste
Lemon - to taste
Sweet chutney
Green chutney
Garlic chutney - to taste (recipe follows)
FOR SWEET CHUTNEY:
Seedless dates - 200 gms
Walnut sized Tamarind - 1
Water - 2 cups
Salt - to taste
Black salt - to taste
Chili powder - to taste
FOR GREEN CHUTNEY:
Coriander leaves - 1 bunch, washed and roughly chopped
Green chilies - 2-3, chopped
Ginger - 1” piece
Cumin seeds - ½ tsp
Sugar - 1 tsp
Roasted split gram - 1 tbsp
Juice of lemon - 1
Asafoetida (hing)- A pinch
FOR GARLIC CHUTNEY:
Garlic - 1 large, peeled
Chili powder - 2-3 tbsp
Roasted grams - 1 tbsp
Salt - 1 tsp
Sugar - 1 tsp
Cumin seeds - 1 tsp
Directions
MAKING
1 Prepare the Sweet Chutney, in a pressure cooker, add dates, tamarind, 2 cups of water, salt, black salt, and chili powder.
2 Pressure cook for 2-3 whistles.
3 Allow to cool.
4 In a liquidizer jar, put the chutney and sieve.
5 If too thin, simmer for 5-10 minutes.
6 For Green Chutney, In a chutney grinder place all the ingredients.
7 Add a little water and grind to a smooth paste.
8 Refrigerate until ready to use.
9 For Garlic Chutney, in a small blender jar, place all the ingredients.
10 Add a little water and make a smooth paste.
11 To make the Bhel Mixture, combine rice puffs with crushed crispies and gram flour noodles.
FINALIZING
12 Making individual portions at a time, in a bowl take 1-2 cups of the bhel mixture.
13 Add onion, potato, salt along with the sweet chutney, green chutney and garlic chutney as per your taste preference.
14 Mix well to combine the ingredients.
SERVING
15 Serve at once.

SEriously anyone can mix the ingredients together. You need to spend time showing how the differnet chutneys are made,, just giving ingredients not enough.

Then you'll say, anyone can grind the ingredients together! If you seriously want to try bhel puri at home, these are probably the best directions Anyway, will try a more detailed video next time.
