Bhel Puri Recipe
Bhel puri is a wonderful crispy Indian snack.It is a snack synonymous with the beaches of Bombay, such as Chowpatty. The snack is available all across India, and may be known by different names - Bhelpuri in Bombay,Jhaal Muri in Kolkata.

Ingredients
1)1 lb Puffed rice (available at Indian grocery stores)
2)200 gms thin sev (available at Indian grocery stores)
3)100 gms coarsely crushed paapri (available at Indian grocery stores)
4)1 tablespoon oil for roasting
5)1/2 a teaspoon cayenne pepper
6)A pinch of hing (asafoetida)
7)1/2 a teaspoon mustard seeds
8)1/4 teaspoon turmeric powder
9)2 tablespoons of raw or roasted peanuts
10)1-2 finely chopped green chillies
11)1 onion finely chopped
12)1 raw mango finely chopped (optional)
13)2-3 small tomatoes finely chopped
14)2 large potatoes (boiled and mashed)
15)Tamarind and dates chutney (recipe submitted)
16)Cilantro chutney (recipe submitted)
17)Garlic chutney (recipe submitted)
For garnishing:

20)Pinch of cayenne pepper (optional)
21)Pomegranate seeds (optional)
22)Finely chopped cilantro/coriander leaves

Directions
For Roasting:
Heat oil in a wok,add hing and splutter mustard seeds,roast peanuts (if using raw peanuts),lower the heat.Now add the puffed rice,crushed paapri,salt,turmeric and 1/2 a teaspoon of cayeene pepper.Mix everything together.Stir occasionally till everything is crisp.Allow it to cool.You can enjoy this as a snack by adding some sev.
For making bhel puri:
In a bowl,mix together the above roasted mixture and ingredients 10 to 17 (add all 3 chutneys as per your taste).Serve in individual plates and then garnish each plate with sev,cilantro/coriander leaves,pomegranate seeds,salt and cayenne pepper.Serve it with couple of puris in each plate.
TIPS:
1)You can totally omit the roasting part.
2)You can also use grated raw papaya for garnishing.
