Istanbul Fried Veal Brain Recipe

Delicious change of pace mdish. Ate this at a party in Istanbul & then had it several more times over a period of 8 years.

Recipe Story

A doctor with whom I worked in Istanbul gave me this recipe. ORIGIN: Dr. Inna Luryzuz, Istnabul-Turkey, circa 1999

Ingredients

 
1 ea Veal brain
 
2 ea Eggs
 
2 tb Flour
 
3 oz Olive or sunflower oil
 
1 tb Cider vinegar
 
1/2 ea Lemon
 
1 qt Water
 
Salt & pepepr to taste

Directions

Soak brain in salt water for 1 hr.
Remove inner membrane.
Boil water with salt & vinegar.
Add brain to boiling water & cook for about 15-20 mins.
Remove & place in a bowl of cold water until cool.
Remove & dry with paper towel.
Cut brain in half.
Slice brain 1/2's into 1/2" pieces.
Whisk eggs with 1 ts flour in a small bowl.
Place brain pieces in remaining flour & then dip in egg mixture.
Fry in hot oil until golden brown.
Place on paper towel to absorb oil.
Sprinkle black pepper over pieces & serve hot.
