 Black beans2 Can (20 oz), drained
 Red bell pepper1 , chopped
 Tomato1 , chopped
 Hot water1 1⁄2 Cup (24 tbs)
 Corn starch1 1⁄2 Tablespoon (Mixed In 1.5 Tablespoon Water)
 Onion1 , chopped
 Garlic2 Clove (10 gm), crushed
 Celery stalks1 , finely sliced
 Chicken bouillon cubes2
 Ground cumin1 1⁄2 Tablespoon
 Lemon1⁄2 , juiced
 Creme fraiche1 Tablespoon (For Topping)

Directions

Combine all chopped vegetables in pan with hot water and cook 7 minutes. Add 1 can of beans and the bouillon cubes and cook 5 minutes.
Place in blender and blend on high 1 minute. Add cumin and salt and blend 10 seconds, return to pan with remaining can of beans. Add lemon juice and simmer 10 minutes, add hot peppers if you like. Serve in a bowl with creme fraiche on top.
