1 lb. tart green apples
 
4 lbs. firm, ripe tomatoes
 
2 lemon slices, 1/4 in. thick
 
4 cups sugar

Directions

Wash, pare, quarter, core, and cut apples into small cubes.
(There should be about 3 cups.) Rinse, scald, peel, and cut tomatoes into small pieces.
(There should be about 2 quarts.) Mix apples, tomatoes, and lemon in a large preserving kettle.
Bring to simmering over medium heat and stir in the sugar.
Cook gently, uncovered, until of desired consistency, about 1 1/2 hours.
Stir occasionally as the mixture begins to thicken.
If desired, stir in several drops of red food coloring before ladling preserves into hot sterilized jars.
