Peach Gazpacho Recipe Video
Ingredients
| Peach | 2 Cup (32 tbs), diced and divided | |
| Cucumber | 1 Cup (16 tbs), diced and divided | |
| Onion | 1⁄2 Cup (8 tbs), diced and divided | |
| Tomatoes | 1⁄2 Cup (8 tbs), diced and divided | |
| Jalapeno | 2 Tablespoon, diced and divided | |
| Cilantro | 1⁄2 Cup (8 tbs), chopped and divided | |
| Honey | 2 Tablespoon | |
| Cumin | 1 Teaspoon | |
| Fresh orange juice | 1 Cup (16 tbs) | |
| Fresh lime juice | 2 Tablespoon |

Directions
1. In a mixing bowl take half quantity of all the ingredients – peach, cucumber, onion, tomatoes, jalapeno, cilantro, honey and cumin. Incorporate well.
2. Coarsely grind the mixture in the food processor.
3. Scrape out in a large bowl and add in left ingredients, mix well. Add in the orange juice and lime juice and incorporate well.
SERVING
4. Serve Peach Gazpacho with croutons and enjoy!
