Ingredients
1 tablespoon olive oil
1 tablespoon butter or margarine
3 large red thin-skinned potatoes about 1 lb. total, scrubbed and cut into eighths
1 medium-size onion, cut into eighths
3 cloves garlic, halved
Salt and pepper
Directions
Place oil and butter in a 9- by 13-inch baking pan and set in a 475° oven until butter is melted and sizzling about 3 minutes.
Add potatoes, onion, and garlic to pan and stir well.
Bake, stirring occasionally, until potatoes are golden brown and tender when pierced about 20 minutes.
