Berry Oat Bran Muffins Recipe

Ingredients
1 egg, slightly beaten
1/2 cup milk or yogurt 125 mL
1/4 cup vegetable oil 50 mL
1/4 cup honey 50 mL
2/3 cup applesauce 150 mL
1 tsp vanilla 5mL
1 cup whole-wheat flour 250 mL
1 tsp baking powder 5mL
1 tsp baking soda 5mL
1 cup oat bran 250 mL
1 cup berries (saskatoon or any other) 250 mL
Directions
In a large bowl, combine flour, oat bran, baking powder, baking soda and salt.
In another bowl, whisk together egg, oil, brown sugar, banana, buttermilk, molasses and raisins.
Add to dry ingredients, stirring just until blended and lumpy.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
