| 1 unbeaten egg white | ||
| 3/4 cup crushed strawberries or raspberries | ||

| Few whole berries for garnish | ||
Directions
To make berry whip, beat egg white, berries and sugar together in a small beater bowl.
Start beating slowly at first to prevent splashing, then increase speed and beat until very thick.
Arrange a slice or scoop of ice cream on each slice of jelly roll and cover with big mounds of berry whip.
Garnish with berries and serve, or arrange jelly roll slices on a cooky sheet.
Top each with ice cream.
Cover the ice cream with big spoonfuls of berry whip and sprinkle with coconut.
Bake at 450F for 3 or 4 minutes, or until lightly browned.
