Bern Councillors Plate Recipe

Ingredients
5 medium potatoes
Salt
4 tablespoons shortening
2 medium onions, chopped and fried
8 thin slices lean bacon, crisply fried
4 slices veal liver or veal kidneys
4 small beef fillets
4 veal fillets
4 small pork sausages
Directions
Pare and thinly slice the potatoes.
Season to taste and fry in shortening until golden, turning occasionally.
Just before potatoes are done, distribute them evenly in the skillet and finish frying just as you would an omelet.
Keeping "potato cake" intact, transfer to a pre heated plate.
Top with the golden fried onions and crisp bacon.
Meanwhile, fry liver (or kidneys), beef and veal fillets, and pork sausages separately and serve with the potatoes.
If desired, use other meat such as pork fillets, sweetbreads, or brains.
Garnish plate with tomato wedges and parsley.
