Benne Brittle Recipe

Vegetable oil for coating the baking pan
1/2 teaspoon vanilla
3/4 cup toasted sesame seeds
3/4 cup sugar
Directions
Completely coat an 8 inch square baking pan with the vegetable oil.
In a heavy saucepan melt the sugar over low heat, stirring, until it is clear and amber colored.
Off the heat, stir in the vanilla and sesame seeds.
Transfer the mixture to the baking pan, press it into an even layer with the back of an oiled tablespoon, and score it with an oiled knife into 1 to 2 inch squares.
When the candy has hardened, invert it onto a work surface and break it where scored into squares.
Store in an airtight container.
Let sit for at least 1 week before eating.
