Belgian Sprout Soup Recipe

Ingredients
1 pound brussels sprouts
3 green onions, chopped
2 cups rich chicken stock or 2 cups water and 4 chicken bouillon cubes
1/2 teaspoon salt
dash white pepper and tarragon
1/4 cup nonfat dry milk solids
2 tablespoons low fat yogurt
1 tablespoon chopped parsley
yogurt or chopped parsley for garnish
Directions
Cook sprouts and onions in chicken stock with salt, pepper, and tarragon until tender, about 10 to 15 minutes.
Puree in a blender with milk solids, yogurt, and parsley.
Reheat until hot through.
Garnish with a dollop of yogurt or parsley.
