Belgian Leek Soup Recipe

Ingredients
3 tablespoons butter
1/2 lb. leeks, or 4 onions
1 lb. potatoes
6 cups beef stock
1 teaspoon salt
1/2 cup light cream or milk
4-6 slices toasted French bread
Directions
1 Trim and wash the leeks well, then slice or peel and slice the onions. Peel and dice the potatoes.
2 Heat the butter in a large pan, add the prepared leeks or onions, and saute gently for 3 minutes. Add the diced potatoes, beef stock and salt, and bring to a boil. Cover with a lid, reduce the heat and simmer for 40 minutes, stirring occasionally.
3 When ready to serve, stir in the cream or milk. Place a slice of toasted bread in each soup bow] and pour on the hot soup.
