Ingredients
3 tablespoons butter
1/2 pound leeks, sliced or 4 yellow onions, sliced
1 pound potatoes, peeled and cubed
6 cups beef broth
1 teaspoon salt
1/2 cup cream or milk
4-6 slices toasted
French bread
Directions
Heat the butter in a large saucepan.
Add the leeks and saute 3 minutes.
Then add the cubed potatoes, beef broth and salt.
Bring to a boil and cook for 40 minutes, stirring occasionally.
Before serving, stir in cream or milk.
Place a slice of toasted bread in each soup bowl and pour the hot soup over the bread.
