Fried Biegnets Recipe

Ingredients
1 cup water
1/2 cup butter or margarine
1 teaspoon sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
1 teaspoon vanilla extract
Salad oil
Confectioners' sugar
Maple or maple-flavor syrup
Directions
1. In 2-quart saucepan over medium heat, heat first 4 ingredients until butter melts and mixture boils. Remove from heat; add flour all at once. Vigorously stir until mixture forms a ball.
2. Add eggs, 1 at a time, beating well with wooden spoon after each addition until mixture is smooth and glossy. Beat in vanilla.
3. Meanwhile, in another 2-quart saucepan over medium heat, heat about 1 1/2 inches salad oil to 375°F. on deep-fat thermometer (or heat oil in deep-fat fryer set at 375°F.). Drop dough by heaping teaspoonfuls into oil, a few at a time; fry until golden. Drain on paper towels.
4. To serve, sprinkle warm Beignets with confectioners' sugar.
