Beignets Recipe

Ingredients
2/3 cup all-purpose flour
1/4 teaspoon salt
2/3 cup water
1/3 cup butter
4 eggs
Confectioners' sugar
Raspberry jam
Directions
1. Sift: flour and salt together.
2. Pour the water into a heavy saucepan and add butter. Bring to a boil. Remove pan from heat and add the flour.
3. Beat vigorously for a few seconds until mixture is smooth and forms a ball. Cool about 5 minutes.
4. Beat in eggs one at a time. Beat for 1-2 minutes till dough is glossy.
5. Place batter in a pastry tube and pipe into circles.
6. Heat the deep fat fryer to 350°F.
7. Dip a metal spatula in the oil and then carefully pick up the beignets and drop them in the oil. Drop only a few at a time so they will have room to puff. Once the dough is added increase the temperature to 375°F and continue cooking about 5-6 minutes until golden brown and firm.
8. Remove the beignets with a slotted spoon and drain on paper towels. Sprinkle with confectioners' sugar and serve with heated raspberry jam.
