Begun Bhaja Recipe
Begun Bhaja in Bengali means freid eggplant.It is a very famous side dish can be eaten with rice ,daal or fish curry.

Ingredients
Eggplant : 1
Salt : To taste
turmeric powder : 1 Tspn
Chilli powder : 1 Tspn (optional)
Oil :For frying
Directions
Wash and cut Eggplant into half inch thick round slices
Rub the slices wtih salt ,turmeric powder and chilli powder (if using)
Heat oil In a sauce pan.
Fry the eggplant slices intill crisp.You can also shallow fry the slices.
Serve hot with rice or curry as a side dish.

American Eggplant is often Black Beauty variety and the photos does look slike this one. Also Asian long skinny eggplants are very popular here in the SF Bay Area. We love eggplant and I grow the egg shapped Indian eggplant great for stuffing, Thai round green and white eggplant great in curries, and several Asian eggplants that are long and purple or green and even white or yellow that are so versatle whether roasted/smoked on the grill or in stirfry dishes.

Begun is also known as Baingan in some Hindi speaking area and as Brinjal in British English speaking world. People also use Bhanta word for the the big rouded Brinjal used to make Bhaja . This Indian Bhanta has similar look as American Eggplant.
