Beets With Parsley Butter Recipe

6 medium sized fresh beets (about one and one quarter pounds)
Boiling water
2 tablespoons butter
1/2 teaspoon crumbled basil leaves
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 1/2 tablespoons chopped fresh parsley
Directions
Leave the beets whole with root ends and about two inches of the tops attached.
Cook in boiling water to cover until tender, twenty five to thirty five minutes.
Remove the beets from the heat, slip off the skins and trim off tops.
Slice one-quarter inch thick and place in a saucepan with the butter, basil, salt and pepper.
Cook until hot.
Turn into a serving dish and sprinkle with chopped parsley.
