Ingredients
3 cups beets, diced or sliced
3/4 cup water
1/2 cup sour cream
1 tablespoon horseradish
1 tablespoon chopped chives
Directions
Place beets in cooker with water.
Close cover of cooker and set pressure regulator in place.
When pressure, is reached, cook for 6 minutes.
Cool at once.
When pressure is reduced, drain the beets and allow to cool.
Mix sour cream, horseradish, and chives.
Pour over the chilled beets; mix gently.
Serve.
If you prefer hot beets in a hot sauce, warm the sour cream, horseradish, and chives over a double boiler.
