Ingredients
24 small new beets, with 2 inch (5 cm) stems, washed
1/3 Cup (80 ml) butter
1 tsp (5 ml) tarragon, chopped
1/2 tsp (2 ml) finely grated lemon peel
2 tsp (10 ml) lemon juice
Salt and pepper
1 tbsp (15 ml) chopped parsley
Directions
– Place beets in a saucepan filled with lightly salted boiling water, cover and cook for 30 minutes or until tender. Drain, rinse under cold water, then gently remove skin and cut stems and roots.
– In a heavy skillet, heat butter over medium heat until foamy, then add beets, tarragon, lemon peel and juice. Season with salt and pepper. Place in a warm serving dish. Garnish with parsley and serve.
