Beets In Spinach Recipe
Ingredients
16 small beets
16 large spinach leaves
Salt and pepper
2 tbsp (30 ml) melted butter
Directions
– In a saucepan filled with lightly salted boiling water, cook beets for approximately 30 minutes.
– Remove stems from spinach leaves and blanch leaves for 30 seconds.
– Spread spinach leaves flat on a cutting board. Place 1 beet on each spinach leaf, season with salt and pepper. Wrap each beet in its spinach leaf, baste leaves with melted butter and serve.
