1 1/2 tsp. butter
 
2 tbsp. brown sugar or granulated sugar
 
1/2 tsp. cornstarch
 
1/3 cup orange juice
 
Dash of salt and pepper
 
1 can (8 oz.) diced beets, drained (1 cup)

Directions

Melt butter.
Mix sugar and cornstarch; blend into butter.
Stir in orange juice and cook until thickened, stirring constantly.
Add salt, pepper, and beets.
Cook until beets are heated through.
Sprinkle with grated orange rind, if desired.
