Beet Soup Recipe

Ingredients
2 large beets diced
1 tablespoon vinegar
1/2 teaspoon salt
2 teaspoons sugar
4 cups beef broth
1 tablespoon flour
1/4 cup water
1 small beet, grated .
Sour cream for garnish
Directions
Put beets in cooker.
Add vinegar, salt, sugar, and beef broth.
Close cover and set pressure regulator in place.
When pressure is reached, cook for 10 minutes.
Cool at once under running water.
Remove cooker cover.
Mix flour and water thoroughly; add to soup.
Stir over a low flame until mixture thickens slightly.
Sprinkle the grated beet on top of the soup.
Serve in soup bowls.
Garnish with a spoonful of sour cream.
