Beet Baskets Recipe
Beets baskets are made with beets along with spinch and bacon. The beet pulp combined with bacon, eggs and spinach is filled in hollowed beets and best garnished with parsley. Served as a side with meats or fish,this side is both savory and delicious.
Ingredients
| Beets | 6 Large | |
| 1 cup chopped cooked spinach | ||
| Egg | 1 , hardboiled | |
| Bacon slice | 1 , diced | |
| Onion | 1 Tablespoon, chopped | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Butter | 1 Tablespoon | |
| Parsley | ||
Directions
Boil beets 1 to 2 hours.
Scoop out centers to form baskets.
Chop centers; mix with spinach and egg-Broil bacon; add to mixture.
Add onion, salt, pepper, and butter; heap mixture into beet baskets.
Garnish with parsley.
