Beet Spinach and Goat's Recipe
Ingredients
| Zest and juice 1 large orange | ||
| 140 g/5 oz couscous | ||
| 25 g/1 oz walnut pieces | ||
| 85 g/3 oz firm goafs cheese, crumbled | ||
| 6 dried apricots, roughly chopped | ||
| 4 small cooked beetroot, quartered | ||
| Spinach leaves | 2 Cup (16 tbs) | |
| Extra virgin olive oil | 2 Tablespoon (FOR THE DRESSING) | |
| Juice 1/2 lemon | ||
Directions
GETTING READY 1) In a small pan, boil 100 ml of water with orange zest and lemon juice. 2) In a medium bowl, place the couscous and poured the boiled liquid over it. 3) Mix the couscous and water well and leave the mixture with a cover for 5 minutes. MAKING 4) With a fork, fluff the wet grains and add walnuts, apricots, beetroot, cheese along with seasoning. 5) Mix in the oil along eith lemon juice. You may also use your favorite vinaigrette. 6) Toss the mixture well. FINALIZING 7) In sealed containers, pack the mixture with a top layer of spinach. This precess would not let the mixture to get soggy. SERVING 8) Toss the spinach in the mixture while eating.
