Ingredients
2 medium beets
1/4 cup (60 ml) water
3 endives
2 cups (500 ml) watercress leaves, loosely packed
Green Onion Dressing
1 tbsp (15 ml) white wine vinegar
1 tbsp (15 ml) green onions, chopped
1 tsp (5 ml) Dijon mustard
1/4 tSp (1 ml) salt
Pinch of sugar
Pinch of pepper
1/4 cup (60 ml) vegetable oil
Directions
– Pour water into a 6-cup (1,5 L) microwave-safe dish and add beets. Cover and cook at HIGH from 10 to
12 minutes or until beets are tender to taste. Drain, then refrigerate. Peel and slice.
– Spread out endive leaves on one side of a dish or salad bowl, and put the watercress on the other, with the beets in the center.
– In a small bowl, whisk vinegar, green onions, mustard, salt, sugar, and pepper. Add oil in thin stream while beating constantly. Pour dressing over salad and serve.
