Beet And Cucumber Relish Recipe
Ingredients
| 2 cups coarsely shredded cooked beets | ||
| 1/4 cup beet cooking liquid | ||
| Cider vinegar | 1/4 Cup (16 tbs) | |
| Cucumber | 1 Cup (16 tbs), peeled | |
| Onion | 1 Small, grated | |
| Sugar | 3 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1 Dash | |
| 1 tablespoon chopped parsley or fresh dill | ||
Directions
Thoroughly mix all ingredients except parsley.
Cover, and store in refrigerator for several hours.
Add parsley or dill just before serving.
