Butter - 4 tbsp
 
Large onions - 4
 
Flour - 2 tbsp
 
Beef broth - 1 cup
 
Dark beer - 2 cups
 
Sugar - 1 tbsp
 
Nutmeg - 1/4 tsp.
 
Salt
 
Pepper
 
Toasted bread - 4 slices
 
Swiss cheese - 3/4 cup, grated

Directions

MAKING
1 In a pan, heat the butter.
2 Add in the onion and cook until soft.
3 Gradually stir in the flour.
4 In another pan, combine the beer and the broth along with the seasonings.
5 Bring to a boil.
6 Add in the onion mixture.
7 Gently simmer for 25 minutes.
8 Meanwhile cut the toasted slices into rounds or squares.
9 Add to the soup and sprinkle with cheese.
10 Place under the broiler until the cheese melts.

SERVING
11 Serve hot.
