5 lb (2.3 kg) shoulder of ham
20 whole cloves
1 Cup (250 ml) molasses
2 tsp (10 ml) dry mustard
1 tsp (5 ml) pepper
1 Cup (250 ml) beer
1 large onion, cut into wedges
Directions
– Preheat oven to 450 °F (230 °C).
– Remove ham rind and stud ham surface with cloves. Line the bottom of a large roasting pan with aluminum foil and place ham in middle.
– In a bowl, combine molasses, mustard, pepper and beer and pour over ham, then add onion pieces.
– Wrap ham in aluminum foil, seal and bake in oven for 15 minutes per pound (450 g).
