 2 lbs. lean beef or pork, cut in 1 1/2 in. pieces
 Butter2 Tablespoon
 Olive oil2 Tablespoon
 4 lbs. small white onions
 Ripe firm tomatoes4 , quartered
 Garlic2 Clove (5gm), minced
 Wine vinegar2 Tablespoon
 Bay leaves2

Directions

Brown meat on all sides in hot butter and oil in a large heavy saucepot.
Add remaining ingredients and then enough water to half cover ingredients in the pot.
Season to taste with salt and pepper.
Bring to boiling, cover and simmer 1 1/2 hours, or until meat is tender and liquid is reduced to a flavorful gravy.
