Ingredients
1 tablespoon soy sauce
1 tablespoon dry sherry
1 teaspoon cornstarch
1 teaspoon grated garlic
1 pound flank steak, thinly sliced with the knife held at 45° angle to the board
2 tablespoons vegetable oil
2 scallions, cut into 1/4 inch diagonal slices
1 pound asparagus, cut diagonally into Winch slices
3 tablespoons hoisin sauce
1/2 cup roasted peanuts
Directions
Combine the soy sauce, dry sherry, corn starch, and grated garlic.
Add the beef and marinate it for 20 to 30 minutes.
Heat the oil in the wok and stir-fry, the scallions for 1 to 2 minutes.
Push aside.
Stirfry the asparagus for 2 to 3 minutes.
Push aside.
Stir fry the beef 3 to 4 minutes, until done.
Return the vegetables to the beef.
Stir in the hoisin sauce and peanuts and serve at once.
