Ingredients

 Tournedos2
 Shallots2 Large
 Garlic cloves2
 Chopped mushrooms1 1⁄2 Cup (24 tbs)
 Butter2 Tablespoon
 Olive oil2 Tablespoon
 Pre made puff pastry1
 Blue cheese1 Cup (16 tbs)
 Egg1 (For Egg Wash)

Directions

pre-heat oven to 475. Salt and pepper the tournedos and roast them in the oven for 5-10 minutes. In a pan add the butter and oil and bring to a medium heat. Once at temperature add the shallots, garlic, and mushrooms - stir often. Once done move to a plate to cool. Lay out the puff pastry on a sheet pan. In the middle of one of the pastry sheets place a nice portion of the blue cheese. Top with 1/4 cup of the mushroom mixture. Place the fillet directly on top of the mixture. Brush the edges of the pastry with the egg wash and fold the sides in to make a nice package. Brush the outside of the pastry with the egg wash. Bake seam side down at 425 until the pastry is GBD - about 25 minutes or so. Enjoy...
