1 - 1 1/2 3 pound beef tenderloin
 
3/4 teaspoon salt
 
1/4 teaspoon pepper
 
2 cups sliced fresh mushrooms
 
1 cup sliced green onions
 
1/4 cup margarine or butter
 
2 tablespoons dry sherry
 
1 tablespoon soy sauce
 
1 tablespoon Dijon-style mustard

Directions

Sprinkle meat with salt and pepper.
Insert a meat thermometer into center of roast.
Place roast in center of cooking grill.
Grill 45 to 60 minutes or till meat thermometer registers 140°F (60°C).
Let stand 15 minutes.
Thinly slice across the grain.
Meanwhile, for sauce, cook mushrooms and green onions in margarine till tender.
Stir in sherry, soy sauce, and mustard.
Heat through.
Serve over meat.
