Directions

Leave the pieces of beef, which may be almost any lean cut, however tough, for 1 or 2 days in a marinade of red wine (see sauce section).
Lift it out, drain it.
Dice the bacon and fry it together with the meat from the marinade.
After 15 minutes, add the very finely chopped onions, then sprinkle with flour, add a little hot stock, then the marinade liquid so that the meat is well covered.
Add a little pepper, put the whole into a fireproof dish, and cook for 2 hours in a moderate oven.
Then add the mushrooms, and if liked a few small onions fried in fat, return to the oven and simmer for 1 hour.
Serve garnished with pieces of fried bread.
