Hearty Beef Stew Recipe Video

Ingredients

 
2 Tbs olive oil
 
2 lbs filet mignon, cubed into 1" cubes
 
1/4 cup all purpose flour
 
salt and pepper
 
1 cup cut carrots
 
1 cup cut celery
 
1 cup pearl onions
 
1 cup cut potatoes
 
2 Tbs tomatoe paste
 
2 cups beef broth
 
1 cup red wine
 
1 minced garlic
 
1 Tbs worshetershire sauce
 
1 bay leaf
 
1 sprig fresh thyme
 
1/2 sprig fresh rosemary
 
2 portabella mushrooms, sauted in 1 Tbs olive oil
 
and 1 Tbs butter

Directions

Melt butter and olive oil in a large stew pot. Cut beef into
1" cubes, dredge in seasoned flour. Brown briefly and drain. Remove beef to
dish and refrigerate until ready to finish stew.
Add garlic, carrots, potatoes, onions and celery. Cook briefly. Add broth,
season broth and add tomato, red wine, garlic and seasonings. Cook. Return
beef to pot add all ingredients and cook down

You can use less expensive meat for this stew! BTW did you serve it with Irish Soda bread? YUM Sometimes they add Irish Whiskey in this stew for flavour, and also a bit for the cook to enjoy! Shanti/Mary-Anne
