 Watercress1⁄2 Cup (8 tbs) (For Garnish)

Directions

Melt the margarine in a pan and saute the onion and carrots for 5 minutes.
Add the meat and fry, turning, until evenly browned.
Sprinkle in the flour and continue to cook for 1 minute.
Transfer the meat and vegetables to a 900 ml/1 1/2 pint (3 3/4 cup) casserole dish.
Stir in the orange rind and juice, stock and orange squash (drink).
Add plenty of salt and pepper to taste and the apricots.
Cover and cook in a preheated moderate oven (160°C/325°F, Gas Mark 3) for 1 to 1 1/2 hours.
Garnish with watercress and serve with rice or potatoes.
Cooking time: 1 hour 10 minutes to 1 hour 40 minutes
