Beef Roll Recipe
Ingredients
| Grape leaves | 3 Dozen | |
| Rice | 1/4 Cup (16 tbs) | |
| Ground beef | 1 Pound | |
| Chopped parsley to taste | ||
| Green pepper | 1/3 To taste, diced | |
| Chopped mint to taste | ||
| Pinch of sweet basil | ||
| Tomatoes | 1 Small | |
| Lemon juice | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut stems from leaves; soak leaves in enough boiling water to wilt.
Mix rice with beef.
Add parsley, green pepper, mint, basil, tomatoes, salt and pepper; blend well.
Place small amount of mixture on grape leaf; roll leaf to cover mixture.
Place several leaves in pan to cover bottom.
Arrange rolls side by side in pan.
Press rolls down firmly; add water to cover.
Sprinkle small amount of lemon juice over rolls.
Simmer, covered, for 1 hour.
Serve with yogurt.
