Ingredients
1/2 Tsp. Salt
1/4 Tsp. White Pepper
2 Lbs. Flank Steak
1 Tsp. Dijon Style Mustard
Mushroom Stuffing:
2 Tbs. Vegetable Oil
1 Small Chopped Onion
4 Oz. Can Mushroom Pieces, drained
1/4 Cup Dried Bread Crumbs
1 Tbs. Tomato Paste
2 Tbs. Chopped Chives
1/4 Cup Chopped Parsley
1/4 Tsp. Salt
1/4 Tsp. Pepper
1 Tsp. Paprika
Directions
Lightly salt and pepper flank steak on both sides.
Spread one side with mustard.
To prepare stuffing, heat vegetable oil in a frying pan; add onion and cook for 3 minutes until lightly browned.
Add mushroom pieces and cook for 5 minutes.
Stir in the parsley, chives, tomato paste and bread crumbs.
Season with salt, pepper and paprika.
Spread stuffing on mustard side of flank steak; roll up jellyroll fashion and tie with thread or string.
